Here’s a simple and flavorful recipe for a Sautéed Mushroom and Broccoli Stir-Fry — quick, healthy, and full of umami.

Ingredients

  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced (button, cremini, or shiitake)
  • 2 tbsp vegetable or olive oil
  • 2–3 cloves garlic, minced
  • 1 tsp ginger, minced (optional)
  • 2–3 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp sesame oil
  • 1 tbsp water or vegetable broth (optional, for steaming)
  • Salt and pepper, to taste
  • Optional garnish: sesame seeds, sliced green onions

Instructions

  1. Prep vegetables:
    • Wash and cut broccoli into bite-sized florets.
    • Slice mushrooms evenly.
  2. Heat oil:
    • In a large skillet or wok, heat vegetable oil over medium-high heat.
  3. Sauté aromatics:
    • Add garlic (and ginger, if using), stir-fry for 30 seconds until fragrant.
  4. Cook vegetables:
    • Add broccoli florets and stir-fry 2–3 minutes.
    • Add mushrooms and continue to stir-fry 3–5 minutes until mushrooms are browned and broccoli is tender-crisp.
    • Add water or broth if needed to help steam broccoli.
  5. Add sauce:
    • Stir in soy sauce and sesame oil, tossing to coat evenly.
    • Season with salt and pepper to taste.
  6. Serve:
    • Garnish with sesame seeds or sliced green onions.
    • Serve hot with steamed rice or noodles.

  • Add protein: Toss in tofu, chicken, or shrimp for a complete meal.
  • More flavor: Add a splash of rice vinegar or a teaspoon of hoisin sauce.
  • Spicy option: Add red pepper flakes or a dash of sriracha.
  • Other veggies: Bell peppers, snow peas, or carrots work well in this stir-fry.
