For serving:

  • Sour cream
  • Guacamole or sliced avocado
  • Lime wedges

Instructions

  1. Cook the beef:
    • Heat 1/2 tablespoon oil in a skillet over medium heat.
    • Add ground beef, season with chili powder, cumin, paprika, salt, and pepper.
    • Cook until browned, breaking it up with a spoon. Remove and set aside.
  2. Cook the shrimp:
    • In the same skillet, add the remaining oil.
    • Cook shrimp for 2–3 minutes until pink and opaque. Remove from heat.
  3. Assemble the nachos:
    • Preheat oven to 375°F (190°C).
    • On a large baking sheet, spread a layer of tortilla chips.
    • Sprinkle half of the cheese, then add half of the beef, shrimp, beans, corn, onions, jalapeños, and olives.
    • Repeat with remaining chips and toppings.
  4. Bake:
    • Bake for 8–10 minutes until cheese is melted and bubbly.
  5. Finish & serve:
    • Top with diced tomatoes or pico de gallo, cilantro, sour cream, guacamole, and a squeeze of lime.
