Here’s a classic recipe for Meatloaf — hearty, flavorful, and easy to make.

🍖 Classic Meatloaf

Serves: 6
Prep time: 15 min
Cook time: 1 hr

Ingredients

Meatloaf:

  • 1 ½ lbs (680 g) ground beef (or mix half beef, half pork)
  • 1 cup bread crumbs
  • 1 small onion, finely chopped
  • 1/2 cup milk
  • 1/4 cup ketchup (plus extra for topping)
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce (optional)
  • 1/2 tsp garlic powder (optional)

Glaze:

  • 1/4 cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard

Instructions

  1. Preheat oven:
    • 350°F (175°C).
    • Grease a loaf pan or line with parchment paper.
  2. Mix meatloaf ingredients:
    • In a large bowl, combine ground meat, bread crumbs, chopped onion, milk, egg, ketchup, salt, pepper, and Worcestershire sauce.
    • Mix gently with your hands until combined — don’t overmix.
  3. Shape the loaf:
    • Transfer mixture into the prepared loaf pan and shape into a loaf.
  4. Prepare glaze:
    • Mix ketchup, brown sugar, and mustard.
    • Spread evenly over the top of the meatloaf.
  5. Bake:
    • Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
    • For a slightly crustier top, broil for 2–3 minutes at the end.
  6. Rest and serve:
    • Let meatloaf rest 5–10 minutes before slicing.
    • Serve with mashed potatoes, roasted vegetables, or your favorite sides.

🍖 Tips & Variations

  • Moist meatloaf: Use half beef, half pork, or add grated vegetables like carrots or zucchini.
  • Cheesy version: Place a layer of cheddar slices inside before baking.
  • Spicy twist: Add hot sauce or chili flakes to the mix.
  • Make ahead: Prepare the meatloaf and refrigerate overnight; bake the next day.

I can also give a quick 30-minute “mini meatloaf muffins” version that’s faster and perfect for individual servings.
