Here’s an easy and delicious Peach Cobbler using canned peaches:

Ingredients (serves 4–6)

For the filling:

  • 1 can (15 oz) sliced peaches, drained (reserve a little syrup for extra sweetness if desired)
  • ½ cup granulated sugar
  • 1 tsp cinnamon (optional)
  • 1 tsp lemon juice

For the topping:

  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish lightly with butter or nonstick spray.
  2. Prepare Filling:
    • In a bowl, mix the drained peaches with sugar, cinnamon, and lemon juice.
    • Pour the peach mixture into the prepared baking dish.
  3. Make Topping:
    • In another bowl, whisk together flour, sugar, baking powder, and salt.
    • Stir in milk, melted butter, and vanilla until smooth.
  4. Assemble:
    • Drop spoonfuls of the batter over the peaches. It’s okay if some peaches peek through—the topping will spread while baking.
  5. Bake:
    • Bake for 35–40 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
  6. Serve:
    • Serve warm, optionally with vanilla ice cream or whipped cream.

If you want, I can give a super quick 15-minute skillet version that uses canned peaches and requires almost no prep. It’s great for last-minute desserts. Do you want that?
