🍝 Italian Drunken Noodles (Pasta alla Drunken)

Ingredients (Serves 4)

For the Noodles:

  • 12 oz wide rice noodles (or Italian pappardelle, tagliatelle, or your favorite pasta)
  • 1 tbsp olive oil (for cooking)

For the Sauce:

  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 medium onion, thinly sliced
  • 1/2 cup dry red wine (a good Chianti or Cabernet Sauvignon works well)
  • 1 can (14 oz) crushed tomatoes (or fresh tomatoes if you have them)
  • 1 tbsp tomato paste
  • 1/2 tsp crushed red pepper flakes (for heat — adjust to taste)
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt & pepper, to taste

For the Garnish:

  • Fresh basil leaves, chopped or whole
  • Grated Parmesan cheese
  • Fresh cracked black pepper

Instructions

1. Cook the Noodles

  • Cook the rice noodles (or pasta) according to package instructions until al dente.
  • Drain and set aside, reserving a little pasta water in case the sauce needs to be thinned out.

2. Prepare the Sauce

  • Heat 3 tbsp olive oil in a large skillet or pan over medium heat.
  • Add the onion and sauté for about 2–3 minutes until softened.
  • Add the garlic and cook for another 30 seconds until fragrant.
  • Pour in the red wine and let it simmer for 2–3 minutes to cook off the alcohol and reduce slightly.

3. Add Tomatoes & Seasonings

  • Stir in the crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes.
  • Season with salt and pepper to taste.
  • Let the sauce simmer on low heat for 10–15 minutes until it thickens and the flavors meld.

4. Combine the Noodles with the Sauce

  • Add the cooked noodles directly into the sauce, tossing to coat.
  • If the sauce is too thick, add a splash of the reserved pasta water to loosen it up and help the sauce adhere to the noodles.

5. Garnish and Serve

  • Plate the noodles, topping with fresh basil and a generous sprinkle of grated Parmesan.
  • Finish with a crack of black pepper for extra flavor.
