Here’s an easy, flavorful No-Knead Rosemary Garlic Bread recipe — crispy crust, soft center, and unbelievable aroma! This is a perfect beginner-friendly artisan loaf.


No-Knead Rosemary Garlic Bread

Prep time: 10 minutes
Rest time: 12–18 hours
Bake time: 40–45 minutes
Total: Mostly hands-off!


Ingredients:

  • 3 cups all-purpose flour
  • 1 ½ tsp salt
  • ½ tsp instant yeast (or active dry yeast)
  • 1 ½ cups warm water
  • 3 cloves garlic, minced (or roasted garlic for a sweeter flavor)
  • 1–2 tbsp fresh rosemary, chopped (or 1 tsp dried rosemary)
  • Optional add-ins:
    • 2 tbsp olive oil (makes a softer crumb)
    • Extra rosemary + flaky salt for topping

Instructions:

1. Mix the Dough (No Kneading!)

  • In a large bowl, combine:
    • Flour
    • Salt
    • Yeast
    • Rosemary
    • Garlic
  • Add warm water and stir with a spoon until a shaggy dough forms.
    (It will be sticky — that’s perfect!)

2. Let It Rise (Long Fermentation)

  • Cover the bowl with plastic wrap or a towel.
  • Let rest 12–18 hours at room temperature.
    • The dough should double in size and be bubbly on top.

3. Shape (Lightly) and Second Rest

  • Dust your counter with flour.
  • Turn the dough out and gently shape it into a ball (don’t knead).
  • Place onto parchment paper and let it rest 30–45 minutes.

4. Preheat Oven + Dutch Oven

  • Place a Dutch oven (with lid) in your oven.
  • Preheat to 450°F (230°C) for 30 minutes.

5. Bake

  • Carefully remove the hot Dutch oven.
  • Lift the dough using the parchment paper and place inside.
  • Cover with lid and bake 30 minutes.
  • Remove lid and bake another 10–15 minutes until the top is deep golden and crusty.

6. Cool

  • Remove from pot and cool on a rack at least 30 minutes before slicing (important for texture!).

⭐ Tips for Best Results:

  • Want stronger garlic flavor? Use roasted garlic cloves mashed into the dough, or add garlic powder (½–1 tsp).
  • Crispier crust: Leave the loaf in the oven for 10 minutes with the door cracked after baking.
  • No Dutch oven? Bake on a sheet pan with a metal pan of hot water on the bottom rack for steam.
  • Add olive oil for a slightly softer, more focaccia-like loaf.
