Here’s a hearty and comforting Hamburger Potato Casserole recipe—perfect for a family dinner with minimal fuss.

Ingredients (Serves 6–8)

  • 1 lb (450g) ground beef
  • 1 medium onion, chopped
  • 3 cups potatoes, peeled and thinly sliced (or 1 bag frozen hash browns)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • Salt and black pepper, to taste
  • 1 tsp garlic powder (optional)
  • 2 tbsp butter, for greasing the casserole dish

Instructions

  1. Preheat oven
    • Preheat oven to 350°F (175°C).
    • Grease a 9×13-inch baking dish with butter.
  2. Cook the beef
    • In a skillet over medium heat, cook ground beef and onion until beef is browned and onions are soft.
    • Drain excess fat. Season with salt, pepper, and garlic powder.
  3. Prepare the sauce
    • In a bowl, mix condensed soup, milk, and 1 cup shredded cheese.
  4. Assemble the casserole
    • Layer half of the sliced potatoes in the prepared dish.
    • Spread half of the cooked beef mixture over the potatoes.
    • Pour half of the soup mixture over the beef.
    • Repeat layers with remaining potatoes, beef, and soup.
    • Top with extra shredded cheese.
  5. Bake
    • Cover with foil and bake for 45 minutes.
    • Remove foil and bake an additional 15–20 minutes, until potatoes are tender and cheese is bubbly.
  6. Serve
    • Let cool 5 minutes before serving.

Tips:

  • For quicker prep, use frozen hash browns instead of fresh potatoes.
  • You can add vegetables like bell peppers, mushrooms, or peas for extra flavor.
  • Swap cheddar for a mix of cheeses (like mozzarella or Monterey Jack) for creamier texture.

I can also provide a slow-cooker version so the casserole cooks while you’re out or busy. Do you want that version?
