Here’s a creamy, cheesy, comforting Broccoli Rice Casserole—simple, classic, and perfect as a side or main dish.


🥘 Cheesy Broccoli Rice Casserole

Ingredients (serves 6–8)

  • 2 cups cooked rice (white or brown)
  • 3 cups broccoli florets (fresh or frozen)
  • 1 tbsp butter or oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup sour cream (or plain Greek yogurt)
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup milk
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/4 cup grated parmesan (optional, for extra flavor)
  • 1 cup crushed Ritz crackers or breadcrumbs (optional topping)
  • 2 tbsp melted butter (if using topping)

Instructions

1️⃣ Preheat & prepare

  • Preheat oven to 350°F (175°C).
  • Steam or microwave broccoli until just tender (bright green, not mushy).

2️⃣ Sauté aromatics

  • In a skillet, melt butter and sauté diced onion for 3–4 minutes until soft.
  • Add garlic and cook 30 seconds more.

3️⃣ Mix the base

In a large bowl, combine:

  • Cooked rice
  • Broccoli
  • Onions & garlic
  • Cream soup
  • Sour cream
  • 1 ½ cups cheddar
  • Milk
  • Salt, pepper, paprika, and parmesan if using

Stir until fully mixed and creamy.

4️⃣ Transfer & top

  • Spread mixture into a greased 9×13″ baking dish.
  • Top with remaining ½ cup cheddar.
  • Optional: Mix crushed crackers/breadcrumbs with melted butter and sprinkle over the top.

5️⃣ Bake

  • Bake 25–30 minutes, until bubbly and golden on top.

6️⃣ Serve

Let sit 5 minutes to set, then dig in!
