For the filling:

- ¾ cup (150 g) granulated sugar
- ¼ cup (50 g) brown sugar
- 2 tbsp all-purpose flour (thickener)
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt
- 1 tbsp lemon juice
- 1 tsp vanilla extract (optional)
- 2 tbsp butter, cut into small pieces (for dotting on top of the filling)
For brushing:
- 1 egg, beaten with 1 tbsp milk or cream (for egg wash)

1. Make the crust
- In a large bowl, whisk flour, salt, and sugar.
- Cut in the butter using a pastry cutter or your fingers until pea-sized crumbs form.
- Add ice water 1 tbsp at a time, mixing just until dough holds together.
- Divide dough into 2 disks, wrap in plastic wrap, and chill for at least 1 hour.
2. Prepare the filling
- In a large bowl, combine sliced apples, both sugars, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla.
- Toss until apples are evenly coated. Let sit for 15–20 minutes to bring out juices.
3. Assemble the pie
- Preheat oven to 425°F (220°C).
- Roll out one dough disk to fit a 9-inch pie pan. Place it in the pan and trim edges.
- Fill with the apple mixture and dot with butter.
- Roll out the second crust and place it on top. Trim, seal, and flute edges (or make a lattice top).
- Brush the top with egg wash and sprinkle with sugar.
4. Bake
- Bake at 425°F (220°C) for 20 minutes.
