Ingredients (4 servings)

  • 8 oz (225 g) linguine or fettuccine
  • 1 lb (450 g) steak (sirloin, ribeye, or flank), thinly sliced

  • 3 cloves garlic, minced
  • 1 small onion, finely chopped

Instructions

1. Cook the pasta

  • Boil linguine according to package directions until al dente.
  • Drain, reserving ½ cup pasta water.

2. Cook the steak

  • Heat olive oil in a large skillet over medium-high heat.
  • Season steak slices with salt and pepper.
  • Sear steak 2–3 minutes per side until browned (or desired doneness).
  • Remove steak from skillet and set aside.

3. Make the sauce

  • In the same skillet, add butter.
  • Sauté onion for 2–3 minutes until translucent.
  • Add garlic and cook 30 seconds until fragrant.
  • Stir in heavy cream and bring to a gentle simmer.
  • Mix in Parmesan cheese until melted and smooth.
  • Season with salt, pepper, and crushed red pepper flakes if using.
  • Add a splash of reserved pasta water if sauce is too thick.

4. Combine

  • Add spinach to the sauce, cooking 1–2 minutes until wilted.
  • Toss cooked pasta and steak back into the skillet with the sauce.
  • Stir to coat evenly and heat through.

5. Serve

  • Divide onto plates and garnish with fresh parsley and extra Parmesan.
