Here’s a Cherry Pie Bars recipe that’s buttery, soft, and perfect for potlucks or easy desserts. Uses cherry pie filling so it comes together fast — but still tastes homemade!
🍒 Cherry Pie Bars
⭐ Ingredients
Crust & Topping
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- ½ tsp almond extract (optional but AMAZING)
- 3 cups all-purpose flour
- 1 tsp salt
Filling
- 1 (21-oz) can cherry pie filling or homemade cherry filling
Glaze (optional but recommended)
- 1 cup powdered sugar
- 2–3 tbsp milk or cream
- ¼ tsp almond extract (or vanilla)
⭐ Instructions
1. Prep
Preheat oven to 350°F (175°C).
Grease or line a 9×13 baking pan with parchment.
2. Make the batter
- Beat butter + sugar until light and fluffy.
- Add eggs one at a time.
- Mix in vanilla + almond extract.
- Add flour and salt; mix until just combined.
3. Assemble
- Spread about ⅔ of the batter evenly into the pan (wet your fingers or use an offset spatula).
- Spoon the cherry pie filling evenly over the batter.
- Drop the remaining batter in small spoonfuls over the top — it’ll spread as it bakes.
4. Bake
Bake 35–40 minutes, until lightly golden and set.
Cool completely before cutting so the bars hold together.
5. Glaze
Whisk powdered sugar, milk, and extract.
Drizzle over cooled bars.
