Here’s a soft, fluffy, bakery-style bread roll recipe — perfect for dinner rolls, sliders, or breakfast buns. Easy, reliable, and delicious every time.


🥖 Soft & Fluffy Bread Rolls

Makes: 12 rolls
Time: 1 hr 45 min (includes rising)

Ingredients

  • 3 ½ cups (440g) all-purpose flour (or bread flour)
  • 2 ¼ tsp instant yeast (1 packet)
  • 3 tbsp granulated sugar
  • 1 tsp salt
  • 1 cup (240ml) warm milk (110°F / 43°C)
  • 3 tbsp unsalted butter, softened (plus extra for brushing)
  • 1 large egg, room temp

👩‍🍳 Instructions

1. Make the Dough

  1. In a large bowl, mix flour, yeast, sugar, and salt.
  2. Add warm milk, butter, and egg.
  3. Stir until dough comes together, then knead 8–10 minutes (or 5 minutes using a mixer) until smooth and elastic.

If dough feels sticky, add 1–2 tbsp flour.


2. First Rise (Proofing)

  1. Form dough into a ball.
  2. Place in a lightly oiled bowl, cover, and let rise 1 hour or until doubled.

3. Shape Rolls

  1. Punch down dough.
  2. Divide into 12 equal pieces (or 15 smaller dinner rolls).
  3. Shape each piece into a tight ball by tucking edges underneath.
  4. Place on a greased or parchment-lined baking sheet, spaced slightly apart.

4. Second Rise

Let rolls rise 20–30 minutes until puffy.


5. Bake

  1. Preheat oven to 375°F (190°C).
  2. Bake 15–18 minutes until golden on top.
  3. Brush with melted butter while hot for soft, shiny rolls.

  • Extra soft: Replace 2 tbsp of the milk with sour cream or yogurt.
  • Golden crust: Brush rolls with egg wash (1 egg + 1 tbsp milk) before baking.
  • Sweeter rolls: Add +2 tbsp sugar.
  • Freezer-friendly: Freeze after shaping; bake from frozen + 5 min.
