Ingredients (Serves 4)

For the Chicken:

  • 1 ½ lbs (680 g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Instructions

  2. Set up a breading station: flour in one bowl, beaten eggs in another, panko breadcrumbs in a third.
  3. Season chicken pieces with salt and pepper. Dredge each piece in flour, then egg, then panko, pressing lightly to adhere.
  4. Place chicken on the baking sheet and lightly spray with cooking oil. Bake for 20–25 minutes, flipping halfway, until golden and cooked through.

2. Make the Sweet and Sour Sauce

  1. In a small saucepan, combine ketchup, vinegar, brown sugar, and soy sauce.
  2. Bring to a simmer over medium heat, stirring occasionally.
  3. Add cornstarch slurry and simmer for 1–2 minutes until sauce thickens.

3. Combine and Serve

  1. Toss baked chicken pieces in the sweet and sour sauce until evenly coated.
  2. Optionally, add bell peppers or pineapple chunks to the sauce and heat for 2–3 minutes.

Tips

  • For extra crunch, bake chicken on a wire rack over the sheet pan so air circulates.
