Cheesy Beefy Roll-Ups are a fun and delicious dish, combining seasoned ground beef and melty cheese wrapped in tortillas or flatbreads. These can be served as a main dish or a great party appetizer. Here’s a simple recipe that’s sure to please!

Ingredients (serves 4-6)

For the Beef Filling:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade seasoning—see below)
  • 1/4 cup water (or beef broth)
  • 1 cup shredded cheese (cheddar, Mexican blend, or your favorite cheese)
  • 1/2 cup sour cream (optional, for creaminess)
  • Salt and pepper to taste

For the Roll-Ups:

  • 4 large flour tortillas (or 6 smaller tortillas)
  • 1 tablespoon olive oil (for frying, optional)
  • Fresh cilantro, chopped (optional, for garnish)

For Optional Taco Seasoning (if you don’t want to use a packet):

  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • A pinch of cayenne pepper (for a kick, optional)

Instructions

1. Cook the Beef Filling:

  1. In a large skillet, heat a tablespoon of olive oil over medium heat.
  2. Add the ground beef, breaking it up as it cooks. Cook until browned and fully cooked through (about 5-7 minutes).
  3. Add the onion and garlic to the beef and sauté for another 2-3 minutes, until softened.
  4. If using a packet of taco seasoning, sprinkle it over the beef and stir in the water (or beef broth). If you’re using the homemade seasoning, mix the spices in and then add the water. Stir well to combine and cook for an additional 3-4 minutes, until the sauce thickens.
  5. Stir in shredded cheese and sour cream (if using). Remove from heat and let the mixture cool slightly.

2. Assemble the Roll-Ups:

  1. Warm your flour tortillas slightly in the microwave or on a dry skillet to make them more pliable.
  2. Spoon a generous amount of the beef mixture in the center of each tortilla.
  3. Roll up the tortillas tightly around the beef filling. If needed, secure with toothpicks to keep the rolls together.
  4. Optional: If you like a crispy exterior, heat a little oil in a skillet over medium heat and pan-fry the rolls for 2-3 minutes per side, until golden and crispy. Alternatively, you can leave them un-fried if you prefer a softer texture.

3. Serve:

  1. Slice each roll-up into bite-sized pieces or serve as whole wraps.
  2. Garnish with fresh cilantro, a dollop of sour cream, or a drizzle of salsa or guacamole for extra flavor.
  3. Serve warm with a side of salsa or cheese dip if desired.

Tips:

  • Make it Spicy: Add some diced jalapeños to the beef filling or sprinkle chili flakes over the top for an extra kick!
  • Cheese Varieties: Feel free to experiment with different cheeses like Monterey Jack, Pepper Jack, or Mozzarella for variation.
  • Meal Prep: These can be assembled in advance and stored in the fridge for up to 2 days before frying or baking. They also freeze well—just wrap them in foil or plastic wrap and store in an airtight container for up to a month.
  • Bake Option: Instead of frying, you can place the roll-ups on a baking sheet and bake at 375°F (190°C) for 10-12 minutes, or until golden and crispy.

These Cheesy Beefy Roll-Ups are perfect for a family meal, game day snacks, or a fun dinner for kids. They’re cheesy, beefy, and bursting with flavor in every bite! 😋

If you’d like, I can give you variations with different fillings like chicken or even vegetarian options. Let me know!
