Ingredients

Base

  • 3 cups cooked chicken, shredded or diced (rotisserie works great)

  • 1 cup frozen corn (optional)

Seasonings

  • 1 tsp salt, more to taste

  • ½ tsp thyme

1. Sauté the Vegetables

  2. Add potatoes if using, plus thyme, parsley, pepper, and bay leaf.
  3. Bring to a simmer and cook 10–12 minutes until potatoes are tender and soup thickens.

4. Add Chicken & Cream

  1. Stir in milk/half-and-half, then heavy cream.
  2. Add cooked chicken, peas, and corn.
  3. Simmer 5 more minutes.
  4. Taste and adjust salt/seasonings.

5. Serve

Ladle into bowls and top with:

  • Buttery biscuits
  • Puff pastry squares (baked separately)
  • Crushed crackers
