Easy Hamburger Quesadilla Recipe

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade seasoning)
  • 1/2 cup water
  • 4 flour tortillas (8-inch or larger)
  • 2 cups shredded cheddar cheese (or a mix of cheddar and mozzarella)
  • 1/2 cup diced onions (optional)
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup sour cream (for serving)
  • Salsa or guacamole (for serving)
  • 1–2 tbsp olive oil (for cooking)

Instructions:

  1. Cook the Ground Beef:
    • In a skillet, cook the ground beef over medium-high heat, breaking it up with a spatula, until browned (about 5–7 minutes).
    • Drain excess fat, if necessary.
    • Add the taco seasoning and water to the beef, stirring to combine.
    • Simmer for 5 minutes until the sauce thickens and the beef is well-coated.
  2. Assemble the Quesadilla:
    • Heat a separate large skillet over medium heat and brush with a little olive oil.
    • Place one tortilla in the skillet and sprinkle with 1/2 cup of shredded cheese.
    • Add a layer of the seasoned ground beef mixture (about 1/4 of the beef), then sprinkle more cheese over the beef (about 1/4 cup).
    • Top with a second tortilla and press gently.
  3. Cook the Quesadilla:
    • Cook for 2–3 minutes on each side, until the tortillas are golden brown and crispy and the cheese is melted.
    • You can flip it carefully using a spatula, or if you’re worried about flipping, use a second spatula or a plate to help.
  4. Slice and Serve:
    • Remove the quesadilla from the skillet and let it rest for a minute before slicing into wedges.
    • Serve with sour cream, salsa, or guacamole for dipping.
