Ingredients:

  • 3–4 cups leftover stuffing
  • 1–2 cups shredded leftover turkey (optional, for extra meaty flavor)
  • 1–2 eggs (to help bind the mixture)
  • ¼–½ cup grated cheese (cheddar, parmesan, or your favorite)
  • ¼ cup milk (if the stuffing seems dry)
  • 1 tsp garlic powder
  • 1 tsp dried herbs (thyme, rosemary, or parsley)
  • Salt & pepper, to taste
  • ½–1 cup breadcrumbs (optional, for extra crispiness)
  • Cooking oil or melted butter for baking/frying

Instructions:

  1. Preheat oven: to 375°F (190°C) if baking.
  2. Mix the stuffing: In a large bowl, combine leftover stuffing, turkey (if using), eggs, cheese, milk, herbs, and seasoning.
    • If the mixture feels too wet, add a bit of breadcrumbs to make it easier to form into balls.
    • If too dry, add a little more milk or a beaten egg.
  3. Form balls: Scoop out mixture with your hands (or a spoon) and roll into 1.5–2 inch balls.
  4. Coat (optional): Roll each ball in breadcrumbs for extra crunch.
  5. Cook:
    • Baking method: Place balls on a greased or parchment-lined baking sheet. Brush or spray lightly with oil/butter. Bake for 20–25 minutes, turning halfway, until golden brown and heated through.
    • Frying method: Heat oil in a skillet over medium heat. Fry balls until golden brown on all sides, about 3–4 minutes per side. Drain on paper towels.
