🧀 Cheesecake Filling (make first)

Ingredients

  • 16 oz (450 g) cream cheese, softened
  • ½ cup (100 g) sugar
  • 1 tsp vanilla extract
  • 1 egg
  • ¼ cup (60 ml) sour cream
  • 1 tbsp cornstarch (optional for stability)

Directions

  1. Preheat oven to 325°F (165°C).
  2. Line an 8-inch cake pan with parchment.
  3. Beat cream cheese & sugar until smooth.
  4. Add egg, vanilla, sour cream, and cornstarch; mix until just combined.
  5. Pour into pan and bake 30–35 min, until set but slightly jiggly in center.
  6. Cool completely, then freeze 30–60 minutes so it’s easy to layer.

🍰 Pineapple Cake

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 ½ cups (300 g) sugar
  • 2 eggs
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla
  • 1 can (20 oz / 560 g) crushed pineapple with the juice
  • ½ cup (120 ml) oil (vegetable or canola)

Directions

  4. Add eggs, oil, vanilla, and the entire can of pineapple (don’t drain!).

🍍 Pineapple Cream Cheese Frosting (optional, but amazing)

Ingredients

  • 8 oz (225 g) cream cheese, softened
  • ½ cup (113 g) butter, softened
  • 3 cups (360 g) powdered sugar
  • ½ tsp vanilla
  • ½ cup well-drained crushed pineapple (squeeze out excess moisture)

Directions

Beat cream cheese + butter → add sugar gradually → mix in vanilla + pineapple. Chill 15 min before using.


🎂 Assembly

  1. Place one pineapple cake layer on a plate.
  2. Spread a thin layer of frosting (acts as glue).
  3. Place the cold cheesecake layer on top.
  4. Add the second pineapple cake layer.
  5. Frost the entire cake with pineapple cream cheese frosting.
  6. Chill 1–2 hours before slicing for clean cuts.
