Here’s a Popeyes-inspired (not the exact proprietary recipe) crispy, juicy, spicy fried chicken that captures the chain’s signature crunch and flavor.

This version uses buttermilk brining, bold Cajun seasoning, and a super-crispy flour coating — the keys to true Popeyes-style texture.

🍗🔥 Popeyes Copycat Fried Chicken (Crispy & Spicy)

Ingredients (Serves 4–6)

Chicken

  • 3–4 lbs chicken pieces (drumsticks, thighs, breasts, wings)

Buttermilk Marinade

  • 2 cups buttermilk
  • 2 eggs
  • 2 tsp hot sauce (or more for spicy)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • ½ tsp cayenne
  • ½ tsp garlic powder

Seasoned Flour Coating

  • 2 cups all-purpose flour
  • ½ cup cornstarch (for extra crunch)
  • 1 tbsp paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp Cajun seasoning
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne (add more for spicy)
  • 1 tsp white pepper (optional but authentic-tasting)
  • 1 tsp baking powder (helps crispiness)

For Frying

  • Neutral oil (peanut, canola, or vegetable)
  • Cast iron or heavy pot

🍗 Instructions

1️⃣ Marinate the Chicken

  • In a large bowl, whisk buttermilk, eggs, hot sauce, and seasonings.
  • Submerge chicken pieces completely.
  • Cover and refrigerate at least 4 hours (overnight = BEST flavor and juiciness).

2️⃣ Prepare the Seasoned Flour

In a large bowl or bag, combine:

  • Flour
  • Cornstarch
  • All seasonings
  • Baking powder

Mix very well.

3️⃣ Dredge for Maximum Crunch

For each piece of chicken:

  1. Let excess marinade drip off.
  2. Coat chicken in seasoned flour mixture, pressing firmly to create a shaggy crust.
  3. Place coated chicken on a wire rack for 10–15 min to help the crust stick.

For extra crispy:
Dip coated chicken back into buttermilk, then dredge in flour a second time.

4️⃣ Heat the Oil

  • Heat oil to 325–350°F (165–175°C).
  • Maintain temperature (crucial!).
  • Oil should be about 2–3 inches deep.

5️⃣ Fry the Chicken

  • Fry pieces in batches so the pot isn’t crowded.
  • Dark meat: 14–18 minutes
  • White meat: 10–14 minutes
    Turn occasionally for even browning.

Chicken is done when:

  • Deep golden and crispy
  • Internal temp reaches 165°F

Let rest on a wire rack for full crispiness.

6️⃣ Serve

Enjoy hot with biscuits, mashed potatoes, Cajun fries, or dipping sauce.

🔥 Tips for Authentic Popeyes-Style Texture

  • Cornstarch + baking powder = lighter, crisper crust.
  • White pepper + cayenne = classic Cajun heat profile.
  • Let chicken rest before frying = crust adheres better.
  • Double dredge for the extra-crunchy Popeyes exterior.
