Roasted Pork Tenderloin

Servings: 4

Ingredients:

  • 1.5–2 lb (700–900 g) pork tenderloin
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tsp paprika
  • Optional: 1 tbsp Dijon mustard or soy sauce for extra flavor

Instructions:

  1. Preheat oven:
    • 400°F (200°C).
  2. Prepare the pork:
    • Pat tenderloin dry with paper towels.
    • Mix olive oil, garlic, salt, pepper, thyme, and paprika (plus mustard if using).
    • Rub the mixture evenly all over the pork.
  3. Sear the tenderloin:
    • Heat a skillet over medium-high heat.
    • Sear pork on all sides (2–3 minutes per side) until golden brown.
  4. Roast:
    • Transfer pork to a baking dish or leave in an oven-safe skillet.
    • Roast 20–25 minutes, or until the internal temperature reaches 145°F (63°C).
  5. Rest:
    • Let pork rest 5–10 minutes before slicing to keep it juicy.
  6. Serve:
    • Slice into medallions and serve with your favorite sides—roasted vegetables, mashed potatoes, or a fruit glaze (apple, cranberry, or mustard-based) works wonderfully.

Tips:

  • For extra flavor, marinate pork for 1–2 hours in olive oil, garlic, and herbs before cooking.
  • A quick pan sauce: After removing pork, deglaze the skillet with ½ cup chicken broth or white wine, simmer 2–3 minutes, and pour over sliced pork.
