Here’s a delicious Seafood Fried Rice recipe—easy, flavorful, and perfect for weeknights or special occasions!


🍤 Seafood Fried Rice

Ingredients (serves 3–4)

Seafood

  • 1 cup shrimp (peeled & deveined)
  • 1 cup scallops or calamari rings
  • 1 tbsp cooking oil
  • Pinch of salt & pepper

Rice & Veggies

  • 3 cups cooked rice (preferably cold, day-old rice)
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3–4 green onions, chopped
  • 3 cloves garlic, minced
  • 1 small onion, diced (optional)

Seasoning

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • ½ tsp white pepper (or black pepper)
  • Salt to taste
  • Optional: ½–1 tsp fish sauce for deeper flavor

🔪 Instructions

1. Cook the seafood

  1. Heat 1 tbsp oil in a wok or large skillet over medium-high heat.
  2. Add shrimp and scallops/calamari.
  3. Season with a pinch of salt and pepper.
  4. Stir-fry 2–3 minutes until just cooked, then remove and set aside.

2. Prepare the base

  1. In the same pan, add a little more oil if needed.
  2. Add garlic and onions; stir-fry until fragrant.
  3. Push to one side, then pour in the beaten eggs.
  4. Scramble until just set.

3. Add rice & vegetables

  1. Add cold rice. Break up clumps with a spatula.
  2. Add mixed vegetables and stir-fry 2–3 minutes.

4. Season

Mix in:

  • Soy sauce
  • Oyster sauce
  • Sesame oil
  • White pepper

Stir well to coat everything evenly without making the rice soggy.


5. Add seafood back in

  1. Return cooked seafood to the pan.
  2. Add green onions.
  3. Stir-fry 1–2 more minutes.
  4. Taste and adjust seasoning (salt, soy sauce, or fish sauce if desired).

🍽️ Serve

Serve hot, optionally topped with:

  • Lemon wedges
  • Chili oil
  • Extra green onions

  • Use day-old rice so it fries instead of turning mushy.
  • High heat = better texture and smoky “wok hei” flavor.
  • Add butter at the end for a richer taste.
