Stuffed Mushrooms Recipe

Ingredients:

  • 20 large white or cremini mushrooms (stems removed, cleaned)
  • 1/2 cup cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (preferably panko for extra crispiness)
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil (for cooking)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: 1/4 cup cooked sausage, crab meat, or spinach (for extra flavor)

Instructions:

  1. Prepare the Mushrooms:
    • Preheat your oven to 375°F (190°C).
    • Clean the mushrooms with a damp cloth and remove the stems. Chop the stems finely and set them aside (you’ll use them for the filling).
    • Arrange the mushroom caps on a baking sheet lined with parchment paper or a lightly greased baking dish.
  2. Make the Filling:
    • Heat 1 tablespoon of olive oil in a pan over medium heat. Add the finely chopped mushroom stems and sauté for about 3-4 minutes until softened and most of the moisture has evaporated.
    • In a medium bowl, combine the sautéed mushroom stems, cream cheese, Parmesan cheese, breadcrumbs, minced garlic, parsley, salt, and pepper. If you’re adding extra ingredients like cooked sausage, spinach, or crab meat, stir them in as well. Mix until the filling is well combined.
  3. Stuff the Mushrooms:
    • Spoon the filling into the mushroom caps, pressing gently to ensure they’re well packed. Top with a little extra Parmesan or breadcrumbs for a crispy topping if you like.
  4. Bake:
    • Drizzle the remaining tablespoon of olive oil over the stuffed mushrooms.
    • Bake in the preheated oven for 20–25 minutes or until the mushrooms are tender and the tops are golden brown.
  5. Serve:
    • Remove the mushrooms from the oven and let them cool for a few minutes before serving. Garnish with a little extra fresh parsley if desired.

Tips:

  • Extra Flavor: For an added depth of flavor, you can add crumbled cooked bacon or sausage to the filling.
  • Cheese Options: Swap the Parmesan for other cheeses like mozzarella, goat cheese, or fontina for different flavors.
  • Make-Ahead: You can prepare the stuffed mushrooms up to 24 hours in advance. Simply assemble the mushrooms, cover, and refrigerate them. Bake them right before serving.
  • Gluten-Free Version: Use gluten-free breadcrumbs or omit them altogether for a low-carb version.
