Ingredients (serves 2–3)

Seafood

  • 2 lobster tails (4–6 oz each)
  • 8–12 large sea scallops (dry-packed)

Garlic Herb Butter

  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh chives, minced (optional)
  • Pinch red pepper flakes (optional)

Instructions

1️⃣ Prepare the Lobster Tails

  • With kitchen shears, cut down the top of each tail shell.
  • Gently pull the meat upward, resting it on top of the shell (“butterfly” style).
  • Pat dry and lightly season with salt & pepper.

2️⃣ Prepare the Scallops

  • Pat scallops completely dry — this is key for a golden sear.
  • Season lightly with salt & pepper.
  • Keep refrigerated until ready to cook.

3️⃣ Make the Garlic Herb Butter

In a small saucepan over low heat, melt:

  • Butter
  • Garlic
  • Lemon juice & zest
  • Parsley, thyme, chives
  • Red pepper flakes (optional)

Simmer gently for 1–2 minutes until fragrant. Do not brown the garlic.


4️⃣ Cook the Lobster

You can bake or pan-sear:

Option A: Oven-Broiled (Best for perfectly tender meat)

  1. Preheat broiler to high.
  2. Brush lobster tails generously with garlic butter.
  3. Broil 5–8 minutes depending on size, brushing again halfway.
  4. Lobster is done when opaque and firm, internal temp 140–145°F.

Option B: Pan-Sear

  1. Heat 1 tbsp oil + 1 tbsp butter in skillet over medium-high.
  2. Place lobster meat face-down for 1–2 minutes to lightly caramelize.
  3. Flip, reduce heat, spoon garlic butter over top.
  4. Cook until opaque and just firm.

5️⃣ Sear the Scallops

  1. Heat a large skillet over high heat with 1 tbsp oil.
  2. When shimmering, add scallops (don’t crowd).

6️⃣ Serve
