  3. Peel off skin, remove seeds, and roughly chop.
  4. Blend with tomato, garlic, lime juice, olive oil, salt, and pepper until smooth.

2. Sauté the Veggies

  1. Heat olive oil in a skillet over medium heat.
  2. Add zucchini and onion, season with smoked paprika, cumin, salt, and pepper.
  3. Cook 5–7 minutes until softened and lightly golden.

3. Assemble the Quesadillas

  1. Place a tortilla in a lightly greased skillet over medium heat.
  2. Spread vegan cheese, then a layer of sautéed zucchini & onion.
  3. Top with a little more cheese and a second tortilla.
  4. Cook 3–4 minutes per side, pressing gently, until golden and cheese melts.
  5. Repeat with remaining tortillas and filling.

4. Serve
